I think that’s so you can get all three dimensional with the photo. I’ve seen it a lot, for a long time, though not generally with knives. I would do it because the alternative is a flat on the table profile shot and that is boring.

That. It started in gun magazines, because it allows you to use the reflected light from the table as a backlight, which improves the definition of the object being photographed.
