Smoking
No, the other kind. Company coming, so I did some cooking. Politically Incorrect Dog is always up for camera time:

But some perfect ribs:
I hear some folks like the baby backs. Not me. I like my ribs to have enough meat that you bite into them and taste, you know, meat. So, I use plain old pork ribs. Actually, I personally prefer beef ribs but I am apparently the only one on the planet that does so I make concessions for guests.
Yeah, they’re good too. I’ll take the Pepsi challenge with any of ya.

You can count me among those who prefer beef ribs, on the critical condition that they’re done right — which is very hard to do.
The problem I have with back yard ribs is that doing them is WAYYY too much like work. And in Memphis, at least, there are at least half a dozen places within fifteen minutes of my house where I can get great ribs cheap, with no effort on my part.

In case you are taking a poll:
pork ribs
pulled pork sandwich, rather than minced pork
with slaw, and a kaiser roll, not that cheap gummy white bread rolls
I can’t decide between a vinegar based finishing sauce or a western type with ketchup.
And yes, it’s a two hour drive to get the real deal here in Maryland (real as in no propane, and real wood smoke from real logs)

Nice smoker. I have one just like it, except mine is a New Braunfels Smoker. I also note that you have the thermometer installed as well. I like to smoke roasts. I usually use a mixture of 2/3 mesquite and 1/3 hickory.
