Good to know
Three Rivers Cornmeal is still going under but apparently White Lily is the same recipe. Some folks are upset:
I have two bags of Three Rivers cornmeal left. I’m going to bronze them for bookends.

Just in case anyone is stocking up on cornmeal (or dried beans, flour, etc), I always seal in a plastic bag and then freeze for say 48 hours to kill the weevil eggs. Some people just store the stuff in the freezer.

Wow, StanMis, talk about your “good to know”…
USDA inspections govern the *amount* of insect parts and eggs present in grain products—not their absence! The idea of this is so gross that young moderns simply ignore it, and, when they lose a batch of flour or baking mix, either blame the supplier or go into a pantry-scrubbing paroxysm.
Decades of experience have convinced me that all grain has a shelf life. That’s a fine practice you have there. Imagine what “kitchen management” was like before lidded crockery, tinned boxes and plastic bags were affordable. Civilization is a damn thin, and recent, veneer.
