Squirrel can be good eating. I got two of them off my deck last summer. One was very tender, the other tough. I guess you have to find a way to determine the age of the squirrel before taking it. The old cliche is correct– they taste like chicken. Use them, then, like you’d use chicken. Two medium sized squirrels make for one large pot of lovely soup, for example. Mmm.
Young squirrels fry up tender for the older ones pressure cook then fry.Or pressure cook all of them until the meat falls off the bones and make squirrel and dumplins.
