I prefer medium therefore I disagree with much of his cooking instructions. For medium you want thinner steak (1/2 to 3/4 is good) so the outside doesn’t overcook before the inside hits pink perfection.

A little too close to “moo” for me, too, but just pop it in a 350 oven after searing and cook it till it’s about 140 internal.
